Ingredients
- Bell peppers, tops removed
- Cooked lentils
- Cooked rice (brown or white)
- Onion, diced
- Garlic
- Olive oil
- Paprika
- Cumin
- Salt & pepper
- Fresh herbs (optional)
Directions
1. Preheat oven to 375°F (190°C).
2. Prepare the peppers by cutting off the tops and removing the seeds. Place them upright in a baking dish.
3. In a pan, heat a little olive oil over medium heat. Add diced onion and garlic and sauté until soft and fragrant.
4. Stir in the cooked lentils and cooked rice.
5. Season with paprika, cumin, salt, and pepper. Mix well and let everything warm through.
6. Spoon the filling generously into each bell pepper.
7. Cover loosely with foil and bake for 25–30 minutes, or until the peppers are tender.
8. Remove the foil for the last 5 minutes if you want the tops a little more roasted.
9. Top with fresh herbs if desired and enjoy warm.
