Ingredients
- Bell peppers, tops removed
- Cooked lentils
- Cooked rice (brown or white)
- Onion, diced
- Garlic
- Olive oil
- Paprika
- Cumin
- Salt & pepper
- Fresh herbs (optional)
Directions
- Preheat oven to 375°F (190°C).
- Lightly sauté onion and garlic in olive oil until soft.
- Stir in cooked lentils, rice, spices, salt, and pepper.
- Fill the bell peppers with the lentil-rice mixture.
- Place in a baking dish, cover, and bake for 30–35 minutes until the peppers are tender.
- Uncover for the last 5 minutes if you like a slightly roasted top.
